A coarsely ground, rich dark rye flour with a distinctive nutty flavor and slightly malty aroma. Tayo is a modern variety of rye that grows well in our region due its drought tolerance and strong stem strength. Since it is a soft grain, we have to be careful when milling to keep the mill stones cold. But it is well worth it, as the wholegrain flour (dark) that spills out of the mill is wonderfully smooth, oil-rich, and delicious. Use for European-style rye breads or as a vibrant addition to spice up any traditional recipe.
